Mini Aubergine Pizzas – Recipes for Kids

This  recipe with vegetables  is perfect for those days when we get home with little time but wanting to prepare something delicious and healthy for the whole family. This  quick dinner  will conquer everyone at home: these  mini aubergine pizzas  are so good!

In a few minutes and with little effort we will have dinner ready, you just have to accompany it with a  salad  and enjoy!

Mini aubergine pizzas

Ingredients

  • eggplants
  • fried tomato or tomato sauce
  • shall
  • extra virgin olive oil
  • grated Parmesan cheese

How to make mini eggplant pizzas

Wash the aubergines well and cut them into slices approximately 7 or 8 mm thick, distribute them on a tray covered with baking paper. We make shallow cuts on the eggplant meat, sprinkle with oil, salt and bake at 180°C for 15 or 20 minutes, turning halfway through cooking.

Remove from the oven, spread each slice with fried tomato, sprinkle with a little grated cheese and return to the oven, this time at 200°C, for about 4 minutes, until the cheese turns golden.
